Beautiful night out on their patio. Man I love breweries.
Deep, inky, rich dark pour with a half finger of brown head that recedes to a fingernail.
The aroma - holy balls. It's pure cinnamon roll with cream cheese icing. The lovely sweet dough mixes with earthy and pungent cinnamon and the cream cheese is actually here. WOW. Undertones of chocolate and caramel and glazed pecans.
Flavor is great as well, mimics the nose quite a bit, bringing cinnamon, sweet dough, cream cheese, nuts, and then a strange earthy-floral-herbal semi-bitterness that throws it off a little. Some cheddar and sweet cream cheese on the finish. Almost a touch too sweet but the odd bitterness counteracts it a bit. Personally -- I'd like a bit of a scotch-ale-caramel-sweetness with it, with the sticky caramel, a hint of maple, and maybe instead of the herbal bitterness more of a sharp pine like you'd get in Ten FIDY or something along those lines. That would be ideal for me. This is still a killer flavor profile.
Feel is slick, boozy, burning, carbonated, and full bodied. Fits perfectly for this beer.
Overall, it's hard to dislike this beer. This is a world-class stout from Covert. This is one of those you could really only handle 12 oz at most of though. It's very rich and a little bit'll do ya. It’s too bad they’re not letting this one outside the brewery.

Covert Artisan Ales Bon Imperial Pastry Stout, 10.4% ABV. Six ounce pour, black and oily looking, with a ring of brown bubbles. Nose is chocolate, cinnamon, and vanilla. Taste follows, plus cream cheese, very sweet, no bitterness. Excellent mouthfeel, overall world-class. Basically a liquefied cinnamon roll.
