Shibumi is an experimental cuvée ale. We blended our IPA with our golden sour base, added organic miso paste in the whirlpool, fermented on organic sweet cherries and finished with a cool steep of chamomile. It pours a sun-faded rose color, with a light, wispy head. Aromatics of honeyed chamomile and tropical punch. On the palate miso adds a soft, umami texture to counter cherry popsicle, yellow chartreuse and salted plum. It finishes with layered floral tea notes.

Orangey pink body with the slightest of pearl bubble rings. Chamomile, some hop dankness, sweet cherry and musky flowers on the nose. Taste is very odd, almost like a mixed drink from college: shows the booze, sickly sweet cherry, and grenadine, but then the chamomile, hops, and flowers refresh it into civility. Don't want a whole pint, but fascinating and creative! Feel is floral, botanical in generally actually, sneaky tart, with good hops to cut the syrupiness.

Honestly, I had no clue what style this was supposed to be but given the ABV, I opted for an English pint glass.
The appearance was a pure thick red cherry flesh color topped by a quickly dissipating cap of bubbly to slightly foamy head. It didn't leave any lace.
The aroma stuck to the red cherry fleshy sweetness in the beginning then brought in a sly touch of chamomile floral sweetness.
The flavor copied the aroma mostly in a sweet manner allowing a light aftertaste of red cherry flesh.
The mouthfeel was between light and medium bodied with a pretty good sessionability about it. Good carbonation. Nice enough smoothness. Finish provided some red cherry fleshy sweetness and chamomile.
Overall, I read this is supposed to be a cuvee of an American IPA and a golden sour base as the brewery claims but I believe most IPA qualities are lost. But me, I did really like this beer for how it came across to me.

A: The beer is quite hazy and very dark rosé in color. It poured with just a short white head that left lots of specks of white bubbles on the surface and a minuscule collar around the edge of the glass.
S: Light aromas of sour cherries and chamomile are present in the nose.
T: The taste is a little sour and has flavors of chamomile along with hints of cherries.
M: It feels a bit more than light-bodied on the palate and has a low to moderate amount of carbonation.
O: This is an interesting beer that combines delicate flavors of sourness, cherries, and chamomile tea.

a bizarre concoction. looks like a soup broth. chamomile in the nose. miso in the body- feels like a sweet soup broth- not salty, but hoppy bitterness is present. not much tart, sourness to speak of. if you never told me what was in it, i don't know what i would've tasted, but im left thinking this is a surprisingly drinkable beer soup.
