Grissom is our base Grisette aged for roughly 4 months in an oak foeder with a mixed culture yeast and bacteria blend, and conditioned on lemongrass and lemondrop dry hop. Expect citrus flavors up front with an oak finish, and saison yeast flavors in the background.

Serving: 750 mL crowler (canned 05/14/2020) poured into a Spiegelau beer tulip.
Appearance: Bright, clear gold with an airy head of sudsy white foam; recedes quickly without much lace.
Smell: Refreshing aroma of tart citrus and vinegar, grass, herbs and light funk.
Taste: More bright acid with citrus and sourdough bread, and crisp, herbal hop bitterness. Woodsy funk emerges in the aftertaste with pleasantly complex lactic notes that almost hit savory.
Mouthfeel: Light body, moderate but relatively soft carbonation.
Overall: Really enjoyable quencher that mixes bright tartness, lactic funk and just the right hoppy bitterness.

Pours a somewhat clear pale light yellow, quarter of an inch head forms, a thin line remains throughout, lacing is a bit light.
Smell:
I get some nice funkiness, spice, grassy, floral, very pleasant.
Taste:
Straightforward funky, spice, floral, bread, aftertaste is just right, does not overwhelm.
Feel:
Light bodied, carbonated, dry, very refreshing.
Overall:
I really enjoyed this one. Especially now that temps are rising in Houston. Look forward to getting this one again for the hot summers.
