Great IPA .. The Sim in the name Zoot Sim stands for the hops used in this brew. Simcoe hops.
The beer had a sweet, pungent hop aroma.
1 finger head which reducded to fine lacing.
The taste was a sweet hop bomb in my mouth. I could taste the
hoppy oil all over my tounge.
Great IPA, very drinkable. Perhaps with the one kind of hops used, this allowed for a distinct taste. No bitter taste some other IPAs have.
I enjoyed this so much I got a growler to go.. which was just as good. I will seek this beer out again. Perhaps with the 7138 bill just passed in CT (thanks Cambridge House) we could see this beer in stores.

Had a couple pints of this on September 2nd, 2005, while having dinner with the old lady. Review written from notes scribbled on a reciept.
Clear gold, capped with a thick, creamy white head. Settles into a tight foam that sticks around for the duration, lacing down the glass like mad. Resiny pine aroma, with a slightly woody cast. Clean, toasty malt and juicy floral hops. The flavor starts with creamy, toasty malt right up front, maintaining a presence throughout, with a peach and apple fruitiness adding to the floral hop overtones. For an IPA, the hops feel somewhat understated, more towards a pale ale, but it's a nice change of pace. Slightly oily on the palate, the creamy smooth carbonation allows the fullish body to sit well. Citric finish, with a sweetish orange flavor very similar to clementines, lingering in the aftertaste. Really nice.
I have no idea why they named this brew after the sax player, but it's some nice stuff. The second pint had a slightly thinner head, but I noticed something rather unusual. You know how when you look at clouds, they sometimes make a shape? Well, the little puff of head in the middle of the glass looked like a cartoon camel. Pretty neat.

unfiltered IPA

looks very light in color for an ipa.. yellow and terrifically cloudy with some orange in the dense center of the glass. creamy foam is gone fast with sparse lacing. nose is nothing too big, some pineapple and little to no hop twang. taste is both botanical and musty. faint hints of orange rind. one of the thinnest bodied ipa's i've ever encountered. floral and perfumy. finishes with a mild bitterness that creeps up slowly. fresh and crisp mouthfeel but lacks any big flavor save a natural spice.
barely enough to keep the ipa moniker. not the best ipa here for hopheads but decent and very drinkable in its extreme brevity.
