Ready for a good pucker? The Manhattan Project is a blend of barley and rye which is soured with Lactobacillus. Inspired by those really expensive maraschino cherries you might find in a upsale manhattan cocktail (you know the ones), we add toasted almonds and cherries. Finally, we age it on oak chips to add a tanic note. The result is a ruby-colored, intensely sour, yet complex flavor.

More almond in the nose and cherry in the taste. Quite tart. Great color in the glass.
