This American IPA has a bright amber appearance. The aroma is floral-raisiny with apple, pear, and cherry with nuances of cinnamon. Taste notes: Medium to light body developing flavors of El Dorado and Cascade hops with back notes of caramel and astringents of American barley, also a lingering hop sting from Apollo.

Pint on draught at the brewery. It pours an orange-cola color with a half finger of fluffy, ecru-colored head and a thin sheen of lacing. Considering it's bitterness there's not much hop in the nose; mostly caramel malt, raisin, and cherry. Wow, you can taste the 120 IBU immediately but it doesn't overwhelm the caramel malt and fruit. At first it seems like a West Coast style IPA but rather than citrus I'm tasting apple, pear, the raisin. There is also lots of barley flavor. It's dry and bitter but multi-dimensional in flavor and nicely balanced. The El Dorado hops provide both pear and, along with the Apollo and Cascade hops, considerable bitterness. The mouth feel is lite and crisp with an appropriate level of carbonation. It's hard to believe it's only 6% ABV. While not boozy, the bitterness speaks to a much bigger beer. Overall, Cease & Desist is one of the more unusual and intriguing IPAs I've had recently. It's very bitter but quite flavoraful. I like this recipe a lot and hope COHO brews it again.
