Fermented in barrels with a mixed culture yeast, yielding an elegant barnyard funk with a distinctive spiced character. A prickly pear addition in barrels added a soft jamminess to the lightly roasted body of this unique Belgian style. Pairs well with strong cheeses and girl scout cookies.
