We’ve been waiting to snag some Phantasm for a bit and we finally got some to play around with. Phantasm is derived from grape skins, that are highly concentrated with thiols. Thiols in beer, when treated right and under the right fermentation conditions, create a distinct fruitiness. We kept our beautiful Citra profile the same and fermented this batch with Omega Yeast Cosmic Punch - a thiol producing yeast. This one’s fun. If you’re used to regular Pixel, snag this to compare.

Opaque yellow/orange appearance.
A rough pour yielded a big, noisy off-white head; a thick curtain of tree-rung lace.
Lemon, fresh cut grass, cream & table sugar notes in the nose.
Creamy, medium mouthfeel.
Lemon, cream, table sugar & mild dry grass flavors.
Lactose vibes (thought they didn't use it in the IPA's?) and not the fruity vibe I like in the style. It's drinkable, but I wouldn't seek it out.
