This year while we were out in Yakima selecting our Citra, Mosaic, Amarillo and El Dorado, we got the chance to visit Double R Hop Ranches, Inc. while they were harvesting their crop of Pahto hops, a super clean bittering hop. We hung out and chatted over some wet hopped beers. When we got home we started drawing up an idea for a collab beer we could do with them and our primary hop supplier, Yakima Chief hops. Double R farm grown Idaho 7, literally just weeks old, pelletized in type-90 form with a dash of Pahto at 60 minutes for a firm bitterness in this West Coast DIPA, Symmetrical Design. The namesake of this beer is from all three company’s logos all being symmetrical. We took our base West Coast grain bill and beefed it up with a bit of Vienna.
