Our passion for stouts, specifically barrel-aged imperial stouts, stems from a Chicago classic - Goose Island’s Bourbon County Brand Stout. About a year and a half ago we teamed up with our friends on Fulton to start a collaboration project. Intertwined by their base beer for BCBS and our imperial stout recipe #2, a recipe that has become our house stout recipe here at Phase Three; the resulting beer was a massive imperial stout that we threw into Willet bourbon barrels. Wooden Wings rested for over 15 months before blending and packaging. Then, without any adjuncts or changes, this beer was simply cooled and lightly carbonated before being bottled into our standard 750mL format.

Bottle pour. Tan head, black color.
This is an excellent barrel aged stout without adjuncts. Fudge, dark fruits, vanilla, caramel, light roast, awesome bourbon notes. Just an awesome ba stout. Full bodied and so smooth and warming.

An even pour yielded a minimal, noisy dark tan head which quickly dissipated; no lace.
Milk chocolate, oak, vanilla & mild bourbon heat notes in the nose.
Thick, sticky mouthfeel.
Milk chocolate & bourbon flavors up front; mild vanilla & faint oak notes on the finish.
Like a less perfect BBT, this evokes chocolate & vanilla without just dumping them in. It's pretty damn good.
