What is it and why should you care?
Amory's Tomb gracefully took the saison relay torch from Mystic and should be recognized nationally for their efforts thus far. They excel at both clean and mixed ferments, and have even wrangled quite the unique brett culture. The intention and care is on display, these are beers for sharing.
This is a bright nuanced herbaceous mineral driven brett saison not focused on bacteria. The tequila barrels it spent time in highlight the rusticity/yeast character without adding spirity-ness. Finish is bitter dusty citrus, but retains the complexity of the nose. Reminds me of the few Saint Somewhere brews I've had, there is a gentle quality, must be the water.
