Here it is. We’ve found another exciting hop variety that we don’t get to work with too often and believe deserves more attention! Behold, this is an American classic, Cascade, grown in New Zealand. The local fertile soils and intense UV light give the well-known hop the familiar kiwi dimension. The usual grapefruit-y aroma thus meets an intense lime and guava note to create a very refreshing fruit combo. The soft and bitter base provides just the right backbone and doesn’t stay in the way of the main focal point, the lovely tropical Cascade. For good measure, it's fermented with thiolized yeast.

Copenhagen 4/12 2023. 50 cl can from Beershoppen webshop. Dark blue can with drawings of big green and red hop flowers.
Pours unclear yellow with a big white head. Stable. Settles as 0,2 cm thin layer of foam covering the surface of the beer. Clinging to the sides of the glass. Substantial lacing.
Aroma is fairly intense with a mild sweet odor of ripe Stone fruits mingling with citrus fruit and tart berries. Sweet peach. Grapefruit and citrus. Tart currants.
Light carbonation. Slightly thick, oily, soft, almost flat texture.
Flavor is medium intense with a rather strong sweetness followed by a medium strong bitterness. Aftertaste is bitter with a sweet fruity undertone. Lingers for a while . Finish is rather dry,

Pours a cloudy, golden amber coloration with a large, fluffy, lasting head. Smells of biscuity, slightly caramelly malt and citrus, tropical hops, with notes of grapefruit and just a hint of papaya. Taste is a great balance of biscuity, slightly caramelly malt and fruity, slightly resinous hops, with citrus and lighter tropical and berry notes of grapefruit, papaya and cranberry, with just a hint of pine also coming through. Finishes with a medium bitterness and some grapefruit and hints of pine lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
This makes for a nice, classic IPA with a great balance of hops and malt. That typical grapefruit character of Cascade is coming through quite vibrant and dominating here, although subtle tropical notes are noticeable as well, differentiating the NZ variety from the classic American one, while the resinous pine is also rather subtle here. It's always interesting to have a single-hop IPA, would have loved to taste this next to one hopped with American Cascade.
