IPA: Ahtanum, Columbus, Cascade, Nelson Sauvin

In the second stage of our explorative journey into what a modern West Coast IPA can be we took it a step further: we squeezed every last bit of reisiny bitternes of fresh Ahtanum, Cascade and Columbus into dry, yet nicely viscous beer that we softened with high-protein malt bill. Getting soft texture leading to satisfying aggresive bite, we then added just a pinch of tropical Nelson Sauvin to put some exotic fruit into middle of that forest. Juicy aroma of kiwi and apricot with piney undertones lets you rediscover the reasons to keep enjoying truly bitter beers.

Copenhagen 27/8 2021. 50 cl can from Ølkassen web-shop. The can looks more like a barrel of fancy paint than a beer can. Discrete subdued patterns in green shades and numbers for tone and hop types.

Pours unclear, pale yellow with a big white head. Fairly stable. Settles as thin, patchy layer of foam struggling to cover the surface of the beer. Substantial lacing.

Aroma is medium intense with a light sweet odor of tropical fruits mingling with a more intense citric scent. Pineapple and peach. Grapefruit and citrus.

Light carbonation Medium thick, soft, smooth, creamy, silken lightly tingling texture.

Flavor is fairly intense with a medium strong sweetness followed by a slightly stronger citric bitterness. Aftertaste is bitter and citric with a light sweet undertone. Lingers for a while. Finish is dry.

Smooth, flavorful and elegant Indian Pale Ale. Very much better than paint.
