Mixed-ferm sours like this one love dry hops. With a one-two punch of brettanomyces to scavenge oxygen and acidity to preserve dry hop aroma and flavour, the fruity character of modern hop varietals – such as the Simcoe we picked out for this batch – can really shine. Meanwhile, the phenols in hops provide an excellent source of materials for many of the complex flavours brettanomyces can produce during can-conditioning to create something with more depth and cellar potential than a kettle sour.

Wild Ambition 'Selfless Preservation' Simcoe dry-hopped sour @ 5.1% , served from a 473 ml can
A-pour is a hazy gold from the can to glass with a small white leaving a fine spotty lace ring along the tulip
S-initial opening , wonderful dank-ness with a potent dry-hop lingering
T-initial taste , very tart , sour , refreshing , thirst quenching , take another sip , repeat
MF-ok carbonation , funky medium body
Ov-another reason why it's BC's best interior brewery , with some funk

Poured under fridge temp. Pours opaque orange with white head. Tons of lacing. Nose is sour, lemons, grass, wheat, and a bit of funk. Taste follows the nose. Sour for sure, with lemon, grass, candy, leather, and some funk. Dry. Overall, a nice mixed fermentation sour.
