Rauchbier with marshmallow and graham cracker. Smoky and sweet like roasting marshmallows over a campfire.

Well, this is an interesting idea for a Rauchbier. I’ve had some s’mores inspired Stouts before, but this one eschews the chocolate and goes all in on the smoke over marshmallows and graham crackers. I’m thoroughly intrigued, so let’s just dive right in
Pours a clear dark amber brown with 2 fingers of creamy light tan head that fades fo a thin cap and leaves minimal lacing
The nose is rather gentle on the smoke, and it leans much more into the sweeter aspects. I’m picking up on aromas of graham cracker, honey, maple syrup, oak smoke, sweet vanilla, burnt sugar, and marshmallow
It leans more into the smoke in taste like I was hoping for, but it’s honestly worse off for it, as it feels undefined. On the front end of the sip I’m tasting beechwood smoke, honey, graham cracker, bready malt, light vanilla, and marshmallow. The swallow brings notes of beechwood smoke, marshmallow, bready malt, sweet vanilla, toffee, and light graham cracker
A medium body pairs with moderate carbonation, resulting in a crisp beer. Finishes slick with an odd sweetness
I don’t hate this, but it’s not great. I can see what they were going for but the execution was off, it all feels rather heavy handed
