I did not know what to expect upon arrival, having only had some of their fairly impressive beers at Voodoo's 2023 Good Vibes Festival, but to see the makings of a veritable lambic producer, even from outside, was stunning.

The attention to every last detail, particularly with respect to old world traditions, is second to none here. I quickly found my expectations ramping up to Jester King and Drie Fonteinen levels when I saw the work being put into preparing the cask handles for the day. However, when that first pour hit the counter, those expectations were still blown away, and it became wonderfully apparent what a special place Primitive really is.

I have never in my life had a cask pour as beautifully pulled as they were here. The gases were so finely compacted that it all held together in a dense reverse cascade for the better part of two minutes, building the most fluffy head I've ever experienced in lambic-inspired ale. And this was true for literally every beer they had available during our visit.

The patience they are taking to develop spontaneously fermented beer in oak, let alone with an eye towards all local ingredients, while experimenting with more modern hop combinations, is just incredible. To put the [Belgian] cherry on top, conversation is highly encouraged, and the owner may just order a pizza or two when the bar gets full, so that anyone who feels the need can walk over and grab a slice. Beyond that, there are a few large picnic tables past a very long standing counter that oversees the impressive array of barrel and foudre stock that they have their beer actively aging in, which some of your pours may actually come directly from.

What they are doing in such a small space, relative to other Méthode Traditionnelle producers I've seen, is truly impressive.
