750ml bottle, wine glass, brewed December 2020.
This was a minor gusher when I uncapped it, a small burbling of tan bubbles reaching toward the crown and slightly overflowing. What’s poured is a mass of tan head. As it settles it crackles and shows more and more of a hazy auburn brew.
Green apple, homemade caramel, apple cider vinegar,
It’s tastes of caramelized apples, copper, and earth. The sweet hits up front, the earthy, decomposing leaf goes all the way through, and it finishes with a fairly substantial bitterness.
Light bodied with high carbonation. It suits.
This style that’s new to me was worth the wait. It has depth and some great flavors.
