I was traveling back from Oklahoma, and as usual, I was searching for breweries I had never been to. I found this one in Raton, and it was out of my way, about an hour. I decided to hell with it and headed toward Colfax Cellars. I learned they were closed for only two hours when I arrived. I got out of my car and started poking around the windows, and the brewer came out and asked if he could help me. I told him I made a detour to try their beer. He said that he was not open but made an exception. Covid was ravaging the town economically speaking. There was a lady in there, too. I did not get to try anything, but I bought several bottles. The brewer was proud of these two Scottish Ale I purchased. I am trying the non-barrel first.
I am using a tulip glass and serving the beer at 44 degrees. The pour created an airy, frothy, light tan, two-fingered head with excellent head retention. The slow dissipation left lots of lacing on the glass. The color charts at SRM 22 are dark brown with ruby hues. The clarity is mostly clear with lots of active yeast bubbles. Overall, it has a gorgeous appearance for this style.
Nosing the glass, I smell caramel, floral ester, toasted bread crust, and earthiness. Smelling the beer again, I detect lady fingers, malty sweetness, white pepper, butterscotch, oranges, and treacle. It has a massive, malty aroma and a lovely balance of hops and yeast. I love the smell of this glass; I do not detect any off flavors.
The flavors begin with lady fingers, toasted bread crust, caramel, oranges, treacle, and floral. Sipping the glass again, I taste nuttiness, white pepper, butterscotch, malty sweetness, and earthiness.
The mouthfeel is creamy, finishing smooth. The body is medium-plus and has medium carbonation.
This is one of the best Scottish Ales I have ever drank. It oozes with a big, malty body and seeps with hop and yeast flavors in the right places. As the beer warms up, the beer gets so much; I'm better, but I am unsure how that is possible. Everything that I have tried so far from Colfax Cellars has been stellar!
