Chicorica Barrel-Aged
Colfax Ale Cellars
Date: 11 Nov 2019
I tried the non-barrel-aged beer; it was fantastic. I used a goblet and served it around 44 degrees. The pour created a massive frothy and airy three-fingered white head with okay retention. The somewhat quick dissipation left gobs of lacing on the glass. The color charts around SRM, amber with golden yellow hues. The clarity is bright with tons of carbonation.
The aromas are banana, cloves, oak, floral esters, toasted bread, white pepper, straw, green grass, phenols, and pineapple.
I taste phenols, banana, cloves, oak, a touch of whiskey, white pepper, straw, toasted crackers, bready, pineapple, pears, earthiness, and subtle funk.
The mouthfeel is dry, a touch astringent, and fizzy.
The body is medium, medium-high carbonation, and has a lasting finish.
The beer is lovely. They nailed the style, and it is refined. I wish I had more. I will visit again.
