i had slightly higher hopes for this, the fermentation profile is nice, but the beer is a little messy overall, not as light and bright and refreshing as i want it to be, especially with the bowl of clams i had in here, i wanted something a little cleaner and uplifting, but this is weighty and soupy with the wheat, kind of raw to me there, and with more body than it needs. there is a lot to like here too though, namely the yeast, which has a cool peppery and allspice vibe to it, a little bitter citrus as well, and mild esters of green pear and apple. it could be a little drier, but the flavor of the yeast is great. subtle coriander notes in the nose and lightly in the finish too, which makes it really classic in its essence, but the level of refinement just isnt quite there, although i do think the beer in here overall is getting better slowly but surely. a bit light on the carbonation, but it doesnt totally drag either, and there is an herbal quality to the finish with the wheat. the malt could be lightened up a little bit, and they could let the fermentation run a little longer, but this isnt bad, the flavors are mostly right, just not as crushable and classic as it could be. for me belgian beer in the classic styles either need to be a bit unique, or need to be immaculately executed, and this one is neither of those...
