Brewed with 50% flaked spelt and 50% 2 row pale ale malt from Thrall Family Malt. Estate yeast/lacto blend was made like a traditional sourdough starter and used to sour the kettle. Fermented on estate grown Corot Noir grapes and traditional German ale yeast.
