Our Christmas Ale was aged for 7 months in Four Roses Small Batch Bourbon Barrels. We brew this ale with local honey and add cinnamon stick and ginger root for a nice, balanced flavor. By barrel aging, it developed a very nice oak and bourbon undertone, that compliments the caramel malt and spices. Each bottle is wax sealed and individually hand numbered.

Dark but clear reddish-brown with a short khaki head settling to a sparse but creamy film
It seems slightly tart at first, with a plum flavor, but that quickly transitions into dark toasted pumpernickel and spice cake. This is then accented by caramelized apple before the barrel brings a little peppery spice and touches of vanillin and caramel oak with hints of cinnamon.
The medium body has a light airy froth and a touch of heat, finishing semi-dry to powder dry. It grows on me over time, being nicely drinkable and not too spicy. The light tartness on the front end is a little concerning but I don't have another bottle to test out its longevity. That said, it's already got at least six months in the bottle, having been released over the summer.
