Will Be, is our flagship saison brewed with spelt and triticale. Will Be is the purest expression of what we believe about brewing and who we are as brewers. Nuance, balance, and complexity. Curiosity, technique, and constant improvement.
Look for notes of mango, pineapple, white pepper, lemon zest, brioche, almond, and peach pits with a taught yet lush body and vibrant, zippy carbonation.

Pours a cloudy light golden color. Lots of yeast can be seen suspended in the beer along with lots of effervescence. Huge, billowy white head forms on the beer, and thanks to a wee bit too aggressive of a pours, quickly spills over the top of the glass. Had eventually starts to dissipate and collapse leaving just a thin layer of velvety foam on top of the beer.
Aroma has notes of lemon zest, lemon, mint, fresh mango and pineapple - its shocking how bright, fresh and fruity this aroma is. There are also some pepper and herbal hop notes coming through on the back end. Malt notes are there, but subtle on the nose - mostly light grain and white bread.
Taste follows the nose with notes of lemon, lemon zest, mango, papaya, pineapple and tangerine. Lots of bright fruity notes coming through in the profile. However, unlike the aroma which is dominated by the fruits, the flavor profile is more balanced with a pronounced white pepper and herbal notes on the back end providing a slight bitterness. Underlying notes of malts are present including some light grain and white bread.
Feel is medium bodied, but still pretty light and crisp. Light carbonation. Semi-dry finish.
Overall this is a very nice saison from Is/Was - a truly worthy beer for a flagship saison.

Fairly hazy Hefe-like maize yellow with a moderately tall fuzzy white head.
The super frothy yet airy light body delivers minty herbality with light farmhouse notes finishing semi-dry.
Not disappointing at all. I'd love a full pour to myself on the back porch.

Pale gold, bright clarity, ample visible carb trails and fluffy meringue foam.
Earthy phenolic yeast aroma, pepper and light clove.
Similar taste, earthy Saison yeast, minerally, pepper clove phenolics. High carb, effervescent, bone dry finish. Brett isn’t overwhelming and will likely develop more over time. Interesting first impression from a new local contract brewer.
