Talk Soft - Brett-Conditioned

Talk Soft is a wheat saison by way of wit and/or weizen. It is brewed with two types of wheat to create a soft yet full mouthfeel. We purposefully reigned the ester production of our house saison yeast in to allow its phenolics, the compounds responsible for the ‘clove-y’ or ‘peppery’ notes in traditional wheat beers, to shine through. ⁣

Then we added honey from our friends at the Hive Supply. The Hive Supply sources hone frome hives throughout Chicago. Urban honey can be more complex than single varietal honeys due to the diversity of nectar sources available to the bees. To preserve this complexity while also making a dry, delicate beer we added the honey directly to fermentation.⁣

The result is a soft, summer, sipper with notes of tangerine, cardamom, honeysuckle, clove, lime zest, white peppercorn, and jackfruit.⁣

This version is bottled conditioned on brett.
