If/When - Bierè a Coupage brewed with Carolina Gold Rice bottle conditioned with Hopewell’s house Mixed Culture.
If/When is a true collaboration woven from three threads with our friends at Hopewell. Three beers that trace the evolution of the Bierè de Coupage tradition of blending aged saison with fresh saison.
This thread is the base Bierè à Coupage or beer for cutting. It is the fresh expression of saison usually intended to be blended with the old stock. This Bierè à Coupage is brewed with malted Carolina Gold rice for a crisp nuttiness and hopped judiciously with Hallertau Blanc hops. It then has a slurry of Hopewell’s house wild culture added to it at bottling which add a very subtle acidity and moderate brettanomyces funk.
Bière de Coupage is the tradition of blending fresh, young, beer with aged/matured beer. In this context 'Coupage' means to 'cut' or 'blend'. Traditionally, a fresh, often hoppy 'Bière à Coupage', or 'Beer for Blending' would be brewed then blended with aged beer to create the 'Bière de Coupage', or 'Beer from Blending'. Typically only the blended 'Bière de Coupage' would be consumed but we took the approach to deconstruct it so you can drink the different components that go into blending the 'Bière de Coupage' next to each other.
