We are super excited for the first installment of a rolling collaboration series we will be doing with our friends at Flat and Point!
Volume one of the series is a saison that we conditioned on celeriac that was smoked in Flat & Point's smoker, and caraway seeds.The nose is fully of aromas of earthy celery root and funky, barnyard-y brett. The flavors follow suit with the addition of forest floor, raisons, grapenuts, allspice, and hints of smoke before giving way to a slightly tart and quenching finish.
Only 192 bottles were produced.

Sampled at Dorothy's Bistro, formerly Flat + Point, served in Is/Was stemware glasses.
Deep saturated orange, ample foam and flecks of spotty lace in the glass.
Very rustic aroma, light Brett, citrus acidity, woodsmoke, savory elements.
Tart and savory flavor profile, works very well with food. Smoke is fairly mild, but lends a woodsy character. Celery root and caraway do the heavy lifting for the savory elements. Mild yet bright citric lemon acidity, mild earthiness in the dry finish. Medium bodied, airy feel with ample carb. Overall this was a hit, and a really great pairing with the dinner at Dorothy's.
