Bottle conditioned with Brettanomyces
Taxonomy Anomaly is a beer about context. About presenting the familiar in unexpected ways. It’s brewed with raw spelt and Riwaka hops from New Zealand which yield aromas of overripe peaches, Alphonso mango, blanched almonds, dehydrated grapefruit, lemon thyme, and just a slight suggestion of hoppy dankness. The finish is very dry with a firm, quenching bitterness and hints of blue raspberry cotton candy.

Bright pale gold with a billowing head of foam, streaky partial lacing to one side.
Aroma is mainly herbal eucalyptus and mildly funky Brett. As it warms there’s an odd popcorn kernel note that I usually associate with THP, but it’s not noticeable in the taste.
Herbal hop bitterness, slightly resiny even. Dried lemon, dusty hay, eucalyptus, bitters. Not really picking up any of the more exotic descriptors.
Medium bodied, first sip was light and crisp, but as the Brett comes out there’s a fullness to it. Not really tart, there’s a mild astringency that may just be from the hops.
Overall this is a nice and hoppy little Brett Saison.
