The Beings For Whom Being Matters is about examination, exploration, and depth. Brewed in collaboration with our friend Averie at Keeping Together it features pu-ehr tea which is a fermented, aged tea known for its mellow, earthiness. The beer has notes of cardamom, lemon zest, clove, white peaches, roasted parsnips, dried mushrooms, black tea forest floor. It was primed for refermentation in the bottle with honey giving it a wonderfully soft and full texture for a beer that is bone dry.

This bottling had yeast and bacteria from Keeping Together’s mixed culture and our favorite strains of brettanomyces added at packaging.

Is/Was and KT doing a beer together? Shut up and take my money! Cloudy golden orange body with a full white head. Orange, lemon zest, tea, big brett, but then powerful dry earth in the nose. Brett and earth with dry yeast lead the taste, hints of dried stone fruit behind, but is out of balance with the earthy tones and warm brett crushing. Disappointing depth in the feel too beyond the dry yeasty wild body.

Pours cloudy to the point of being essentially opaque. Bright yellow-gold color. Thick frothy, velvety white head forms on the beer, lingers, and sticks around for quite some time even as it dissipates. The aroma on this is incredibly inviting - the brett is there, but subtle. It allows the underlying notes of the beer to still come through clearly. There are notes of tea, clove, cardamom, lemon zest, roses, some light floral notes with an overarching earthiness.

The taste follows the nose with notes of lemon zest - a bit zestier and pronounced that the nose would have indicated - gives way quickly to a strong earthiness with an almost umami character along with some woody bitterness from the hops, some floral hops, a touch of honey, all lending to this complex flavor profile that keeps giving you engaged with every sip. Feel is medium bodied, smooth, with a bone dry finish. Moderate carbonation.

Overall this is a lovely beer - I suspect I will prefer the young version of the brett beer since it has not taken over the other flavors, but I will be interested to see how the second bottle develops over time.

Pours a murky saturated amber orange with a finger of foam and plenty of lace. Great head retention.

First whiff of bubblegum and Highland whisky, definitely has a leathery Scotch thing going on in the aroma.

Tart and a little buttery. Brett and some lactic acid cut through the buttery diacetyl, malt, and herbal hop bitterness. Somewhat odd, maybe the tea but not really sure.

Feel is medium bodied, though a little heavy. Not as crisp as it could be, but it will surely dry out more over time. Overall it’s okay, but under-delivers on the exotic ingredients and prestigious collaboration.
