Hoppy Saison Brewed with Cascade, and Willamette
Wherein Time and Space is about extrapolating depth from coy simplicity. Brewed in collaboration with our friend Rob from Supermoon Beer Co. in Milwaukee, it features some old school hops (Cascade and Willamette) and some hops that are actually old (aged Celeia and Willamette). The beer is taut and nimble with notes of grapefruit peel, white flowers, Juicyfruit gum, black pepper, coriander, and a touch of aged hop funk. bottled conditioned with brett.

Pours a cloudy burnished gold color. Cloudy, but not truly opaque. Lovely velvety white had forms on the beer, lingers, then slowly settles in to a cap of rolling hills and winding valleys of white foam. Excellent retention.
Aroma has notes of earthy, woody hops bringing with them some subtle orange and citrus. There are notes of funky yeast and some brett, a touch of cracked peppercorn.
Taste has notes of grain, woody earthy hops, some orange and citrus notes, a touch of funky yeast and coriander. The brett is still pretty young - it's just starting to give it a bit of funk. Woody, bitter hop finish.
Feel is light to medium bodied. Moderate carbonation. Semi-dry finish.
Overall a lovely hoppy saison. I do think some more time would have allowed the brett to develop more, but this was still quite good.
