Collaboration with Goldfinger Brewing Co.
Brettanomyces-bottle conditioned Is/Was' version of our Rotbier collaboration. We brewed a double-decocted Nuremberg Rotbier at Goldfinger, split the batch in two, and Is/Was fermented theirs with their house Sasion yeast in their brewery. This beer is bottle conditioned using their house Brettanomyces yeast strain for smooth natural carbonation and added dryness.
