Country beer is a collaboration with our friends at Hop Butcher For The World. A quaffable beer to have in your provisions if the roads become impassable and you may need to hunker down for a while. Structured with Pilsner Malt and Crystal Rye from Sugar Creek and hopped with Spalter Select and a dusting of New Zealand Cascade. Tuck into notes of rich loam, dates, thyme, pineapple, apple blossoms, and lime pitch. Conditioned on Balaton Cherries. Production time 10 months, fermentation vessel Stainless Steel. 1/2/26 - (Bottle - Home) (Chicago, IL) Bottle Notes: Purchased from Beer on the Wall at store temperature on December 10, 2025 for $12.53 including tax Refrigerated upon returning home before opening this afternoon. 16.9 oz, released in October 2025. 5.1% ABV Country Beer conditioned on Balaton Cherries, collaboratively brewed with Hop Butcher For The World. 10 Months Production Time, Stainless Steel Fermentation Vessel, Naturally Carbonated, Expect sedimentation, store and chill upright. Art work by Joe Kraft. Brewed and bottled at is/was Brewing 5121 N. Ravenswood Avenue, Chicago, Illinois.
Country beer is a collaboration with our friends at Hop Butcher For the World. A quaffable beer to have in your provisions if the roads become impassable and you may need to hunker down for a while. Structured with Pilsner Malt and Crystal Rye from Sugar Creek and hopped with Spalter Select and a dusting of New Zealand Cascade. Tuck into notes of rick loam, dates, thyme, pineapple, apple blossoms and lime pith.
Appearance: Poured about 4/5 of the bottle into a large tulip glass, yielding a cherry pink purple blended unfiltered base, heavy sustained carbonation and an slight egg white light head that is creamy around the rim with a thin cover over nearly 40 percent of the base. 4.5
Aroma: Tart cherries dominate, mild funk, light lemongrass. Medium plus strength and enjoyment. 4.0
Taste: Lighter touch on the cherries, lime, lemon grass, pineapple. All gentle individually, but come together well. 3.75
Mouthfeel: Persistent gentle carbonation over a sweet watery light to medium body. Drinks light and easy, enough tart and funk to balance out excess cherry sweetness. Becomes mellow as this warms, cherry the entire journey. 4.25
Overall: This is a solid collaboration, digging the cherry flavors. Hard to isolate flavors beyond, but am enjoying this for what it is and would order in the future. Recommended for cherry lovers. 4.0
