this is a really clever beer, a surprise to me from a brewery i had never heard of before. they are apparently doing some really cool stuff, the recipes are neat, the cans look good, they seem ahead of the curve. this one is a big dry hopped ipa brewed with a bunch of honey in it, an ingredient synergy we just dont see enough of, but has long inspired me. the honey in this is pretty robust, even with the beer being fermented down close to dry, its impressive how much of it comes through, a real raw, from the hive sort of vibe, natural as can be, floral, and here from start to finish. the hops are not just juicy dry hops either, there is some bitterness to this, a more assertive base beer than i anticipated, yet it never overwhelms what the honey contributes. some spiciness to the hops, some bitterness, a grapefruit note, wet woods in the fall, a higher alpha bite, and some subtle bitter orange and green tea notes, all real compatible with the honey. maybe a shade more crystal malt than it needs, not sweet but rounder and fuller than the flavors seem to want, great carbonation though, and not a real long lasting finish either from honey or hops. the fermentation is pretty clean too, i just wish it was a little fresher. there is some obvious fade to it all setting in, and it throws off the proportions a little bit, but nowhere enough to spoil this for me. its smart and its well executed and super fresh it would be lights out. thats how i hope to find it next time. get these guys on your radar, their beer is really cool!
