Roebuck has been “combined” with DryHop as of May 2022, but I was also told they will reopen the Roebuck bar space soon. Roebuck doesn’t really make their own beers I was told, some beers are stored in brite tanks on the Roebuck “side” however. We wandered in to check out the space, it was a little more cozy than the industrial chic vibe of the DryHop space. Central U-shaped bar, kitchen in back where all the food was running from.
Unfortunately the pizza we had was not good. Burnt flakes from the pizza oven/pan had adhered to the bottom, giving the crust a very bitter, acrid burnt taste. The toppings were excellent, but we brought it up to the bartender who gave a halfhearted apology upon seeing all the 1” black flakes on the pan. I love Neapolitan style and bubbly charred crust, but there’s a process issue in the kitchen here.
Beers were limited to the DryHop branded stuff, which is always fine but no great shakes. They had a new “cold IPA” that was good.
Overall, i’d return for a beer, but Roebuck's pizza needs work. Corridor and Crushed By Giants both make better pizza within the same brewery group.
