Notes via stream of consciousness: This beer is one of the simpler beers that Opificio Birrario produces in terms of ingredients: It’s just water, barley, sugar, hops, and yeast - but it’s also one of their more interesting beers due to the Belgian yeast. It’s not filtered and undergoes a third fermentation in the bottle for a natural carbonation. As you might expect, it’s a living beer that’s not Pasteurized. It’s hazy deep reddish copper beneath a short head of creamy khaki-colored foam. The head retention is very good but the lacing could be better. The aroma suggests a combination of caramelish malt and dark dried fruits with some fresher fruits (pear, red apple, plum), a touch of honey, and a pinch of spiciness. The flavor follows, pretty much exactly, and it’s quite interesting. It’s almost a classic Belgian-style dubbel but not quite, and that’s actually a good thing as it’s really unique and special. As with all of the other beers that I’ve tasted from them this is really quite fresh and bright without being over-done. A firm bitterness balances it and it finishes mostly dry with some fig and other dark fruit, some honey, medium caramel, an underlying floral character, and a light dusting of spice left lingering. In the mouth it’s medium bodied, supple, and smooth with a very fine-bubbled and natural, moderate carbonation. If I had to choose just one beer from this brewery it would be this one.
