Rum Barrel-Aged 100% Brettanomyces (Brett) Dubbel
This beer uses a Belgian-Style Dubbel base recipe that we fermented with 100% Brettanomyces and then aged for 12 months in Cruzan Rum Barrels. The aged qualities from brettanomyces play nicely with the barrels characteristics. Flavors and aromas of plum, cherry pie, earth, spice and oak are all constant and in balance throughout.
Malt: Pilsner, Munich, Carafoam, Special B, Crystal 45 L
Adjuncts: Raw Wheat Flakes, Dark Candi Syrup
Hops: CTZ/Saaz
Yeast: Brettanomyces Drie Fontenein

Had on tap. Opaque lighter brown body with two fingers of white foam. Nose is led powerfully by the rumm, brett and dark fruit linger. Rum, brett, dry earth, oak, and molasses dipped dark fruit combine for a new world wild take that honors the dubbel's characteristics. Feel is medium bodied, warm, mildly funky, and sneaky dry.
