cold ipa, one of the best beers we had in here over our two visits, super clean and light, bright and not weighed down by a bunch of crystal malt like a lot of their other beers are, and with a modern and juice forward hop profile that works really well, tropical notes play into the island vibes here, and it felt like the right thing to be drinking, crisp and refreshing for an ipa because of the cold fermentation, definitely a great recipe. blonde to golden in color, crystal clear and glowing immaculate, short white head on it from the tap and large sized bubbles rising up. the aroma is almost thiol boosted to me, white wine grapes, white peaches, champagne, sweet orange, and pineapple candy, really appealing, id love to know what varietals are in play, the malt has some minerality to it but is otherwise very light, and the yeast is drying and close to neutral, so this is all about the hops, a little bit of bitterness goes plenty far in the flavor, all on the swallow, leading up to that its waves of meyer lemon, fresh stone fruit, and lemongrass and pineapple, tropical for sure, even a little guava and coconut nuance to me among slight weedy dankness and swirling oiliness from the hops, very well composed overall and rather full spectrum on the hop side. lighter medium body, quick finishing almost in the lager range, nothing green or vegetal or harsh from the hops despite the higher dosage, and refreshing and easy to drink on. a lovely take on the style and a beer they should consider packaging. loved it.
