Chicago always does things its own way and this is our fresh new take on a traditional Czech style pilsner.

16oz can dated 10/12/20.
Poured into a pilsner glass, the clear, golden body with random rising bubbles briefly supports a 1" head of white mixed bubbles uet leaves the glass clean behind.

Bready and floral aroma matches the flavor with a slight finishing astringency.

Mouthfeel is clean, medium and almost soft.

Overall an easy drinking pils.

First and foremost this does not resemble a Pilsner.....more of a golden ale...and honestly for what they charge for a 4pk, you can get an awesome, true Pils from Dovetail close by, for less....was hoping for more

Pale gold, ample foam that quickly fades, very minimal lacing.

Fruity aroma is driven by a lot of yeast esters, fresh cut honeycrisp apple, light crackery malt.

Taste is similarly fruit forward, red and yellow apples, light pilsner malt sweetness up front, with a dry herbal hop finish. Clean with a balanced bittersweet mix of noble hops and malt. Light bodied with a supple feel and easygoing carbonation.

Overall this is a solid Czech Pils, a little more hop character would be nice, but it’s very drinkable. A growler disappeared in no time. Interesting selection of Czech/Polish/German hop varieties, yeast could be a touch less estery.

For the record, this beer is distinctive and brewed to style. It holds it own against Dovetail Pilsner (which I buy by the case), but it's not a competition. Please learn to review beer objectively, comparing it to others isn't a review.
