Brewed in collaboration with our great friends at Casita, Pyrex Scholars is a West Coast style DIPA. We took a classic West Coast style malt bill and hop schedule, and combined it with some of our favorite contemporary hops: Strata, Mosaic, and Nelson Sauvin. Dry hopped with the same varietals. A new twist on an old classic.

neat beer, big, and it drinks big, but its also cool in the its both hazy and drinks like a hazy, but is also bitter and sort of west coast in its complexion and finish, the best of both worlds, or rather, a contribution from both worlds, i dont know that this is amazing, especially being a little older now it seems, some definite oxidation in the aroma and flavor, but its still evident that its different. some peach character to the hop profile right away, some lemon and lemongrass too, both citrusy and herbal, maybe some canned pineapple pushing me toward mosaic, but also southern hemisphere, light notes of drill, dandelion flower, green tea, and piney bite, pretty complex even with some fade, and the flavor follows. i like that the grain flavor is there too though, like enough of these just feel big but dont get a lot of real flavor contribution from the grain, but this does, wheat and probably oats, fuller but not just pale and dry, its got an organic cereal thing, an agricultural element, even some terroir if such a thing is possible for one of these marketing companies playing brewery, which are getting old, whats with the pricing dudes? you have no overhead, but thats another conversation. the haze has flavor, so thats cool. the hops lighten this a little, even though they are bitter, like some of the white grape and herb suggestions make it almost delicate, even though there is some alcohol pretty much the whole way. i appreciated this, but i didnt love it. surprised this is just my first from these guys, been seeing the cans around awhile, i was sure i had dabbled before this one. anyway, distinctive enough, but wished i had caught it fresher...
