Cannon is named for the explosion this beer caused during barrel fermentation (imagine a grenade that shoots 30 litres of beer instead of shrapnel). Cannon is an English style barley wine aged in a single rum barrel.
Cannon pours a deep Mahogany. Aromas of red liquorice, raisin, caramel and burnt sugar dominate with undertones of dried black currant and pear. The first sip has strong flavours of caramel and molasses up front. Following these rich sugars is the undeniable taste of rum raisin cake.
This beer has very low carbonation to try and emulate a “straight from the barrel” feel for the person imbibing. It has a medium-heavy body that is rich, smooth and sweet without being cloying. At a whopping 11.9% ABV this is a sipping beer best served at 15°C.

Bottle: Poured a murky brown color ale with an almost non-existent head with limited carbonation and no lacing. Aroma of unrefined grain malt notes with some rum notes is OK. Taste is a mix of unrefined grain notes with some rum, light oak with some more or less attenuated residual sugar notes. Body is pretty full with almost no carbonation and light warming alcohol notes. Not bad but would improve with some clean-up of flavours and more balance.
