MM is a saison we began fermenting with Brett a, and pitched Brett c about 1/2 way through fermentation.
We then refermented the beer on Alphonso mango sourced from India, and racked to a whiskey barrel that previously held gin.
We blended the beer with a traditional no-boil tart wheat beer fermented in stainless with a mixed culture of Saccharomyces, Brettanomyces and Lactobacillus brevis.
The blend was then bottle conditioned with a mix of Brettanomyces and wine yeast
