Wild ale with hand-crushed Scarlet strawberries, bred in 2015 by the New Jersey Agricultural Experiment Station at Rutgers University. The strawberry was bred specifically for the New Jersey climate to minimize the need for pesticides and maximize strawberry sweetness while balancing acidity.
We went with the idea that a short contact time with the strawberries would minimize (along with the hand-crushing) the chance for that "plastic-y" taste often associated with strawberry beers. After 7 days and a small Citra dry-hop, we kegged the 55 gallons left after refermentation and let it condition for just a month.
