TM BLUE was spontaneously fermented using all New Jersey malts and raw red wheat (as always from our friends at Rabbit Hill Malt). After a night in our coolship, it fermented for a year in French Oak before we moved it onto 6 pounds per gallon of freshly picked New Jersey blueberries from Hammonton, which translates to about a pound of blueberries in each bottle.
At the tail end of refermentation, we added big beautiful Ugandan vanilla beans, pushing waves of creamy cocoa and earthy dried fruit.
Conditioned in 750ml corked and capped Rotras champagne bottles.
