Pours a dark brown color with a minimal head that disappears quickly. Aroma is chocolate and roasted malts. Tastes of coffee, caramel and chocolate. Smooth and creamy.

Cajun Fire "Big Chief" American Stout 5.00% ABV
16 fl oz pull-tab can ran me $2.69 USD plus tax at 504 Craft Beer Reserve, New Orleans, LA.
"Creme stout." 5.0% ABV.
Brewed with black caramel, chocolate, and Munich malts.
Served slightly chilled into a shaker pint.
APPEARANCE: ~1 cm khaki colour head; it's a bit thin. Opaque cola black body colour. Very basic appearance for a stout.
AROMA: Faint chocolate malt, dark malt sweetness, brown bread. I don't detect the Munich malts, actual chocolate, or any roasted barley.
Aroma is quite mild. Suggests a weak stout with a no-frills flavour profile for the style.
TASTE & TEXTURE: Thin and weak on the palate, with a poor overall presence. Not a robust stout by any stretch. Flavour profile is very basic for the style...timid specialty chocolate malt, generic dark malt sweetness, hints of brown bread. No coffee-like roast or overt roasted barley is present.
Well-carbonated. It's a bit creamy, which I guess is where it gets its "creme stout" designation from. I'd like to see the brewers go silky smooth, über creamy, and very soft and to incorporate vanilla bean and/or mellow coffee if they really want to deliver on the creme stout premise; this drinks like a generic American stout less desirable than really any decent widely distributed stout in the U.S. (e.g. Deschutes, Sierra Nevada, Founders, Victory, Bells, et al.).
OVERALL: Very hum-oh tired work in the oversaturated stout category. Not very promising considering this is one of Cajun Fire's "we're finally up and running for real now!" two debut beers...if this is what we're to expect from their future offerings, this brewery is in real trouble - if they had a publicly traded stock, I'd consider shorting it.
