An American style stout conditioned on birch chips to impart that old timey Amish birch aroma and subtle birch taste.

Pint on draught at the brewery. Served in a plastic cup due to COVID 19 restrictions. It pours the color of dark cola-mahogany with a thin, light mocha-colored head and modest lacing. The smell features roasted malt, anise, tobacco smoke, charred nuts, and burnt coffee grounds. I don's smell the advertised birch chips. The taste opens with a lot of licorice, along with burnt coffee, baker's chocolate, and earthy char. Only as it warms do I begin to taste the birch chips, and even then they are subtle. I'm more used to spruce tips which seem to have more overt flavor. Nonetheless, they add interesting notes to the taste. The mouth feel is rather thin for a stout; it drinks more like a Porter. The carbonation level is appropriate, as is the 6.7% ABV. My impression of Jedediah is that Sunken Siloh has an interesting and potentially good recipe. It could be improved with some vanilla and a thicker, chewier mouth feel.
