One and two year-old lambic with apricots
(o.a Bergeron) from the Ardeche in France.
This blend has a more sour profile than Moonwalk.
Just as we look every year for the specific barrels with a soft lambic and lactic touch for the Moonwalk, we also encounter other beautiful barrels during this tasting. In this blend we combine the soft lambic with a fresher lambic. These lambics “dance” together with the apricots in the fermentation tank. The apricots are also Bergerons from France. These apricots are characterized by their juicy and fleshy character with a deep flavor.

Poured from a glass (20Sep2020) into a slew of glasses (mine a Grimm geuze glass)
L: pours a slightly turbid light yellow gold with a mild white head that fades after several minutes. No real visible carbonation, slight white bubbles at the edge after ~10 minutes
S: very pleasant blend of bright fruit and balanced acidity. Apricot shines - nicely sweet, giving me some apricot fruit strip vibes. The acidity of the base beer mixes nicely with the fruit - there’s a bit of funk but it’s incredibly mild, getting more tart than anything else on the lambic front
T: delivers the nose very well, really excellent blend of sweeter almost jelly notes with apricot and lambic tart. I feel like fruit leather is the best description of the flavor - some fruit skin, good amount of tart flesh. Not much in terms of funk - no surprise given the nose, one slight knock
F: light+ body, medium+ carbonation. That acidity is fantastic. Dancing on the tongue feel

The nose is pure apricot, a blend of ripe and semiripe apricots, though the base beer didn't have the depth of lambic. Mildly funky, mildly vinous. A touch watery on the palate. Gorgeous fruit character, coupled with a mildly lactic base.
