Collaboration with Second Draft Brewery
This Spelt IPA dry-hopped with Cashmere and Citra was brewed with our long-time friends from Andrew and Matt who have just kicked off their new brewing project Second Draft Brewery. Between State and Main Street was where we first developed our love for craft beer years ago, and with this beer we hope to continue that journey that has brought us as well as many others together in this community.

Poured from a 16 oz. can. Has a golden color with a 1/2 inch head. Smell is of melons, tropical fruits. Taste is of melons, mango, papaya, mild bitterness. Feels medium/full bodied in the mouth and overall is a pretty good beer.

From a 16 oz. can dated 09/23/20. Sampled almost one year later on Sept 11, 2021. I did not age this deliberately.
The appearance is as a NEIPA should be with a very hazy, very milky, pulpy looking light amber-orange with a full, lasting ivory head.
A year old and I still get vibrant aromas of pineapple, grapefruit, oranges, nectarines, citrus, and tropical fruit along with a malty breadiness.
Smooth, soft, medium mouthfeel.
The taste is still sweet with all of those tropical fruit characters mixing together to enhance the drinking experience. Considering this is a 12 month old IPA, it has held up extremely well. Actually one of the better NEIPA's I have had recently.

A: The beer is very hazy and a bit pale yellow in color. It poured with a quarter finger high white head that died down but consistently left a thin layer of bubbles covering the surface and lots of lacing down the sides of the glass.
S: Light aromas of honeydew melon are present in the nose.
T: The taste follows the smell and has additional hints of gooseberry and lime. No bitterness is perceptible.
M: It feels medium-bodied and juicy on the palate with a moderate amount of carbonation.
O: I particularly liked how the aromas and flavors of melon stood out in this IPA.

L: Poured from a tallboy can to a snifter glass. Had a yellowish-orange color and an extremely cloudy consistency. There was a quarter inch of foamy, somewhat long-lasting head. Excellent lacing.
S: A sweet and enticing aroma of citrus fruit, hops, malt, and tropical fruit.
T: Tasted of a small amount of malt (mostly in the finish; not a huge factor), a whole lot of citrus fruit (orange, in particular), a moderate amount of hops (not overdone, but certainly present), and a decent amount of tropical fruit (mango, especially). This is an incredibly well-balanced and easy to like flavors. Pretty tasty.
F: A good amount of carbonation with a smooth and creamy finish. Medium-bodied.
O:A well-rounded and likable beer. Drinkable.
