This one pours a dark black color, with a small head, and a little bit of lacing.
This smells like dark chocolate, toasted coconut, tobacco, oak, and a light dusting of cinnamon.
Cinnamon is often a tough adjunct to pull off, but they did it here. It’s a nice little spicy touch that plays well with the bourbon and oak here, and doesn’t dry the beer out. There’s a good dose of coconut, but it’s not an overwhelming thing at all – it plays well with the sweet-ish bourbon character. There’s also char, oak and dark chocolate that helps keep this from being too sweet – like pretty much all Timber barrel aged stouts that I’ve had, it’s very well balanced.
This is medium bodied, creamy, and super drinkable for the style, with very little booziness to it.
Leave it to Timber, one of my new favorite breweries, to make a stout with cinnamon that I actually like.
