Quiet Desperation is an English-style barleywine aged 22 months in a single 1792 High Rye Bourbon barrel. After nearly two years slumber in this single cask, we set out to attempt something we’ve never done before by way of fractional freezing. The lone barrel was tediously lugged outside and left for 7 full days in the sub-zero Nebraska climate where time and temperature allowed for the freezing of water content while simultaneously condensing the residual malt sugars and ethanol within the beer.
Once it was established we had succeeded in forming a layer of ice atop the liquid beneath we extracted the barleywine out from under. What we were left with is an 18.1% monster of malt brimming with burnt sugar, dark fruit, & delectable spirit.
