its cool to see some wild and funky stuff coming through from these guys, seems like they do a lot of things really well, not just the lagers i originally knew them for. this one is aged in oak and done with an apparently small amount of rainier cherries, it does not look, smell, or taste like a fruited beer to me, although perhaps there is a little of that wrapped up in the wood profile that presents itself so prominently toward the back end. its golden with a light orange glow and a nice fizzy white head on it, uniformly hazy but not thick looking, very much alive. it smells super bretty and not very acidic at all, wet animal and funk, oak, and straw, not much tang or fruitiness, maybe a little light citrus thing, white wine too, i do not perceive any cherry. the flavor is awesome, lots of complexity in the ferment on this, mature and woody and with a cool brett mix it seems. maybe some tangy cherry as it warms, minerals and juiciness at the same time, an almost cherry blossom thing too rather than the actual fruit, white wine again, and orange. its fuller bodied with some obvious wheat to it, creamy feeling even, low acid for something wild like this, and it warms up super well. good carbonation, odd finish, again the fruit being kind of minimal, but this is about the ferment and the ferment rules. i have been super impressed with these guys top to bottom so far, hope they keep sending the cool ones like this to idaho. reasonably priced too for what it is...
