world class beer right here, maybe the best i have had from these guys, a funky dry brett lager that is both super rustic and absurdly well refined, this is one of my favorite beers i have drank in a long time, really fantastic, i am definitely going to buy some more of it. the bottle open with a pop and fizzy white bretty bubbles start to rise up before the pour, which is hard to settle, airy wispy white foam like beaten egg whites on top of radiant and lively straw colored brew, just a little haze as i pour more and more towards the bottom of the bottle, but it stays light and delicate looking, supremely effervescent, gorgeous. the aroma is musty and funky right away, hayloft, wet animal, wet paper, white wine and oak, dried grass clippings, cedar wood, dank basement, white pepper, yellow corn, drying minerals, lots happening here, but i do not perceive lager yeast. the flavor is exquisite, totally funk driven to me, but all so delicate and in balance, the grain is soft and earthy, pils malt and white wheat to me, there is a saison ester here too, some cool nuance from the oak vessel, and a cool dry hop profile that hints at noble hops for a second before bringing a little clean lemon to the fold late. its super farmy on the brett side, maybe brett brux leading the way, and its super dry and crisp and textured like a good lager, bottle conditioning also on point, but i do not really taste the lager yeast either, i somehow dont miss it because the mouthfeel delivers for it. very light and very subtly complex, it warms up well, and finishes with oak, lemongrass, and white tea. absolutely wonderful beer right here, not to be missed for fans of the funk!
